This commitment is growing in line with travellers' increasing ecological awareness, with 76% wanting to travel more sustainably according to the latest Booking survey. As customers become increasingly demanding, the urgency of climate change is being felt more and more. The hotel and catering industry, which accounts for 13% of the 118 million tonnes of C02 emitted by tourism, must therefore redouble its efforts to become a more responsible sector.
