Véronique Debarge, Purchasing Director France at Entegra, explains the concrete actions implemented by the group to support industry actors in the face of inflation.

Inflation on the plate is worsened by the war in Ukraine, as it is a country that produces a lot of agricultural raw materials. This situation impacts us all on a daily basis. Here are a few concrete examples of how to "hunt" for savings and operational performance, particularly in the area of foodstuffs.

Basic raw materials are being affected, the price of oils is rising and no alternatives exist. We are therefore focusing with our teams on finding savings in other areas.

First example:

We worked with a hotel group on its breakfast offer. Our methodology was to review the specifications product by product, to determine the group's expectations for each product. This enabled us to determine, in conjunction with the group, the most suitable products in terms of quality/cost ratio in order to reduce expenditure on the breakfast buffet.

We focused on smoked salmon and smoked bacon. For the smoked salmon, we managed to retain a quality product and made savings in the cutting process. We also sourced a producer and smoker based in the Ile-de-France region. This type of direct work can also be a source of savings.

The same principles apply to the smoked bacon, we opted for a much thinner slice sourced from a producer in the Paris region.

These two actions resulted in an 11% saving on the raw material costs of the breakfast buffet.

Second example:

For a restaurant owner in Nice who wanted to keep a juicy, local rib steak on his menu. He was working with a Charolais rib steak from Normandy, but we offered him one from the Piedmont region of Italy, which is much closer geographically. This change allowed him to save €2 per kilo, which works out to savings of about €40,000 per year.
